White Chocolate Strawberry Truffles

Ingredients
  

  • ¼ teaspoon vanilla extract
  • ¼ cup powdered sugar
  • 3 tablespoons heavy whipping cream
  • 1 drop pink food coloring
  • ¼ cup unsalted butter
  • 1 cup white chocolate chips
  • ½ teaspoon strawberry extract

Instructions
 

  • Place the white chocolate chips into a medium mixing bowl and set them aside. In a small saucepan over medium heat, melt the unsalted butter, then stir in the heavy cream and bring the mixture to a gentle simmer. Immediately pour the hot cream mixture over the white chocolate chips and let sit for 1 to 2 minutes to allow the chocolate to soften. Add the strawberry and vanilla extracts along with the pink food coloring, and whisk until the mixture is completely smooth and homogenous. If the chocolate has not melted fully, microwave the mixture in 15-second intervals, stirring after each, until smooth. Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour. Scoop out approximately 1 to 1½ tablespoons of the chilled mixture and form it into balls, then roll each truffle in the powdered sugar until fully coated. Chill the finished truffles in the refrigerator for another 30 minutes to 1 hour prior to serving.

Notes

Avoid using fresh strawberries as their moisture content results in an overly soft and unstable center. Strawberry extract imparts a bold, consistent flavor ideal for this preparation. If the mixture appears to separate after adding all components, continue stirring thoroughly until emulsified. A shorter chilling time produces a softer, more malleable dough, whereas a longer chill yields firmer, easier-to-handle portions. Use a metal spoon or cookie scoop for best results when shaping the truffles.
