Ingredients
  

  • 1 8-ounce block of sharp cheddar cheese, shredded
  • ¼ cup finely chopped pimentos
  • 1 8-ounce block of mild cheddar cheese, shredded
  • ½ teaspoon kosher salt
  • 2 –3 tablespoons mayonnaise optional, for preferred consistency
  • ¼ teaspoon ground black pepper
  • 1 8-ounce package of cream cheese, softened

Instructions
 

  • Blend the sharp and mild cheddar cheeses thoroughly with the softened cream cheese until the mixture is uniform and smooth.
  • Incorporate the diced pimentos along with the kosher salt and ground black pepper, stirring until evenly distributed.
  • Adjust the consistency to your liking by mixing in the optional mayonnaise, or alternatively, a spoonful of Greek yogurt or the reserved juice from the pimentos.

Notes

Ideal for use as a dip with fresh vegetables, crackers, or pretzels, or as a flavorful spread on sandwiches, burgers, or grilled chicken.
