Pineapple Cheese Ball

Ingredients
  

  • 2 teaspoons seasoned salt such as Lawry's
  • 2 tablespoons finely minced green onion or grated onion
  • 1 8 oz can crushed pineapple, well drained
  • Crackers for serving
  • 2 8 oz packages cream cheese, softened
  • 1/4 cup green bell pepper finely chopped
  • 2 cups pecans finely chopped, divided

Instructions
 

  • In a large bowl, blend the softened cream cheese, crushed pineapple, 1 cup of chopped pecans, green bell pepper, green onions or grated onions, and seasoned salt until thoroughly combined. Shape the mixture into a cohesive ball. Place in the refrigerator and allow to chill overnight to firm. When ready to serve, roll the chilled cheese ball in the remaining cup of chopped pecans to coat evenly. Present alongside your preferred selection of crackers.

For best results, ensure the pineapple is thoroughly drained to maintain the desired texture.
