- 12 slices Swiss cheese cut on the diagonal
- 2 teaspoons poppy seeds
- 2 tablespoons Dijon mustard
- 1 large egg white
- ¼ teaspoon ground black pepper
- 2 green onions finely sliced
- ⅓ cup unsalted butter softened
- 1 tablespoon honey
- 1 pound thinly sliced smoked deli ham
- ½ teaspoon sea salt
Preheat the oven to 375°F and prepare a 9 x 13-inch baking dish with a light coating of oil or nonstick spray. In a small mixing bowl, stir together the softened butter, Dijon mustard, green onions, and honey; season the mixture with sea salt and black pepper to taste. Spread this seasoned butter evenly over both halves of each croissant. Assemble the croissant sandwiches by layering each with smoked ham and a slice of Swiss cheese, then gently close. Arrange the prepared croissants in a single layer in the baking dish. In a separate bowl, beat the egg white with 1 tablespoon of water and brush the mixture over the tops of the croissants; finish by sprinkling with poppy seeds.
