Combine strawberries, Greek yogurt, honey, vanilla extract, and a pinch of salt in a blender or food processor and blend until the mixture is completely smooth.
Drop spoonfuls (approximately 1 tablespoon each) of the blended mixture onto a parchment-lined baking sheet or large plate, allowing space for them to spread.
Transfer the baking sheet carefully to the freezer and let the chips freeze thoroughly for 1 to 2 hours.
Meanwhile, place the chocolate in a small microwave-safe bowl and melt it in 30-second intervals, stirring between each, until smooth. Let the melted chocolate cool slightly.
Take the frozen chips from the freezer and dip each one into the melted chocolate, then return them to the baking sheet.
Once all chips are coated, place the sheet back into the freezer until the chocolate sets completely.
Store the finished chips in an airtight container in the freezer until serving.
