Easy No-Bake Chocolate Coconut Energy Bites

Ingredients
  

  • cup unsweetened cocoa powder
  • ¼ tsp salt
  • 1 tbsp water
  • 1 tsp vanilla extract
  • cup finely shredded coconut flakes for coating
  • ½ cup unsweetened shredded coconut flakes
  • 1 cup raw almonds
  • 1 cup pitted medjool dates approximately 10–12 dates

Instructions
 

  • Place the pitted medjool dates into a food processor and blend until the mixture forms a cohesive mass.
  • Add in the almonds, cocoa powder, shredded coconut, vanilla extract, water, and salt, then process again until the ingredients are uniformly combined and the mixture holds together when pressed between your fingers.
  • Scoop out approximately 1 tablespoon of the mixture and shape into compact balls.
  • Roll each ball in the reserved finely shredded coconut flakes to evenly coat.

Notes

If the mixture is too dry to form into balls, incorporate additional water, one teaspoon at a time, until the desired consistency is achieved.
