Easy No-Bake Buckeye Graham Treats

A decadent yet effortless dessert, these no-bake treats combine the richness of chocolate, the creaminess of peanut butter, and the satisfying crunch of graham crackers into an indulgent snack.

Ingredients
  

  • 2 tablespoons coconut oil or shortening
  • 12 graham crackers approximately 1 1/2 sleeves
  • 1/2 cup peanut butter chips
  • 1/2 cup butter softened
  • 1 teaspoon coconut oil or shortening for drizzle
  • 3 cups semisweet chocolate chips
  • 1 1/2 cups creamy peanut butter
  • 2 1/2 cups powdered sugar

Instructions
 

  • Line two trays with parchment paper and top each with a wire rack for cooling.
  • In a mixing bowl, blend softened butter with creamy peanut butter until the texture is smooth and uniform.
  • Slowly incorporate the powdered sugar, stirring thoroughly until a cohesive mixture forms.
  • Shape the mixture into small portions, pressing each evenly onto one half of a graham cracker to the edges.
  • In a small saucepan set over low to medium heat, gently melt the semisweet chocolate chips along with the 2 tablespoons of coconut oil or shortening until fully liquefied and smooth, then allow to cool slightly.
  • Dip the peanut butter-covered surface of each cracker into the melted chocolate, then transfer to the wire racks.
  • To create the drizzle, melt peanut butter chips together with 1 teaspoon of coconut oil or shortening, stirring until smooth, then spoon over the chocolate-coated crackers.
  • Permit the chocolate to firm at ambient temperature for 2 to 3 hours or place in the refrigerator for quicker setting.

Notes

Ensure the chocolate layer has cooled slightly before dipping to maintain structural integrity. Refrigeration is optional but speeds the setting process significantly.
