Crispy Cheesy Cauliflower Bites

These cheesy cauliflower bites make for a delectable low-carb snack or appetizer. Crisped to a golden hue with a soft, cheesy interior, they offer a delightful way to enjoy vegetables. Convenient to reheat and simple to prepare, these bites are sure to become a repeat favorite.

Ingredients
  

  • 2 tablespoons olive oil
  • 1/2 teaspoon ground black pepper
  • 1/2 cup seasoned breadcrumbs
  • 3/4 cup shredded sharp cheddar cheese
  • 1 egg
  • 3/4 cup shredded mozzarella cheese
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1 medium head cauliflower or one 12 oz bag of riced cauliflower
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika

For the dipping sauce:

  • 1/4 cup buffalo sauce
  • 1/2 cup ranch dressing

Instructions
 

  • Chop the cauliflower finely, or use riced cauliflower if preferred. Steam for 10 minutes or until fork-tender, then drain thoroughly.
  • Place the drained cauliflower in a large mixing bowl and incorporate the mozzarella, cheddar, breadcrumbs, egg, and all seasonings. Blend until evenly mixed.
  • With lightly oiled or damp hands, shape the mixture into 12 small patties.
  • Warm the olive oil in a 10-inch frying pan over medium-high heat. Cook the patties for approximately 5 minutes per side, or until a rich golden brown is achieved.
  • Alternatively, for a lighter option, bake or air fry the patties at 400°F for around 15 minutes, flipping once midway.
  • Combine the ranch dressing and buffalo sauce in a bowl to create a tangy dipping sauce. Serve the bites warm with the sauce on the side.
