Crispy Cheesy Cauliflower Bites

- 2 tablespoons olive oil
- 1/2 teaspoon ground black pepper
- 1/2 cup seasoned breadcrumbs
- 3/4 cup shredded sharp cheddar cheese
- 1 egg
- 3/4 cup shredded mozzarella cheese
- 1 teaspoon dried parsley
- 1 teaspoon garlic powder
- 1 medium head cauliflower or one 12 oz bag of riced cauliflower
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon smoked paprika
For the dipping sauce:
- 1/4 cup buffalo sauce
- 1/2 cup ranch dressing
Chop the cauliflower finely, or use riced cauliflower if preferred. Steam for 10 minutes or until fork-tender, then drain thoroughly.
Place the drained cauliflower in a large mixing bowl and incorporate the mozzarella, cheddar, breadcrumbs, egg, and all seasonings. Blend until evenly mixed.
With lightly oiled or damp hands, shape the mixture into 12 small patties.
Warm the olive oil in a 10-inch frying pan over medium-high heat. Cook the patties for approximately 5 minutes per side, or until a rich golden brown is achieved.
Alternatively, for a lighter option, bake or air fry the patties at 400°F for around 15 minutes, flipping once midway.
Combine the ranch dressing and buffalo sauce in a bowl to create a tangy dipping sauce. Serve the bites warm with the sauce on the side.
