Creamy Orange Dream Cookies

Ingredients
  

  • 2 tablespoons orange zest
  • 11 ounces white chocolate chips
  • 1 box 3 ounces orange gelatin powder
  • 2 large eggs at room temperature
  • 8 tablespoons salted butter softened
  • 1 box 15.25 ounces white cake mix

Instructions
 

  • Preheat the oven to 350°F and line two spacious baking sheets with parchment paper or silicone baking mats; set aside.
  • In the bowl of a stand mixer or a large mixing vessel, blend together the white cake mix, orange gelatin, and orange zest until the mixture is homogenous.
  • Incorporate the softened butter and eggs into the dry mixture and beat with a mixer on medium speed for approximately 2 minutes, ensuring to scrape down the sides and base of the bowl intermittently for even mixing.
  • Gently fold in the white chocolate chips until evenly dispersed throughout the dough.
  • With a 1 ½ tablespoon scoop, portion out the dough, roll each piece into a sphere, and arrange them on the prepared baking sheets, ensuring at least 2 inches of spacing between each cookie.
  • Bake for 10 to 13 minutes, or until the perimeters of the cookies appear set. Allow them to cool directly on the baking sheet for about 10 minutes before transferring to a wire rack to finish cooling.

Notes

Store any remaining cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze them in a tightly sealed, freezer-safe container for up to 3 months. Let thaw at room temperature prior to serving.
