Ingredients
  

  • 2 teaspoons Everything but the Bagel seasoning optional
  • 1 teaspoon onion powder optional
  • 1 cup small curd cottage cheese preferably 4% milk fat

Instructions
 

  • Preheat your oven to 350°F and line a baking sheet with parchment paper to prevent sticking.
  • In a mixing bowl, combine the cottage cheese with the onion powder if using, and stir until evenly blended.
  • Spoon out tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing each mound approximately 1 inch apart.
  • Using the back of the spoon, gently press each portion to slightly flatten them, ensuring uniform thickness for consistent baking.
  • Sprinkle the tops with Everything but the Bagel seasoning if desired.
  • Bake in the preheated oven for 30 to 40 minutes, keeping an eye on them after the 25-minute mark. Look for golden edges and reduced surface moisture as signs of doneness.
  • Once baked, let the chips cool completely on the parchment-lined sheet for 10 to 15 minutes before removing to avoid breakage.
  • Serve with your choice of dip and enjoy promptly for optimal crispness.

A serving equals roughly 6 chips. If making a larger batch, consider half the total for each serving.
Ensure excess moisture is drained from the cottage cheese; blotting with a paper towel helps achieve a crispier texture.
Chips may burn quickly once the liquid evaporates, so monitor closely from the 25-minute point onward.
Using 4% milk fat yields optimal results, though 2% is acceptable. Full-fat versions are ideal for the crispiest outcome.
