Ingredients

For the Roll-Ups:

  • 3 tablespoons brown sugar
  • 2 tablespoons ground cinnamon
  • 3 tablespoons butter melted
  • 10 slices white sandwich bread

For the French Toast Coating:

  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 1 tablespoon milk
  • 3 large eggs

For Cooking:

  • 2 –3 tablespoons butter for frying

Instructions

  • Trim the crusts off each slice of bread, then flatten using a rolling pin. In a small bowl, combine the melted butter with the brown sugar and cinnamon to form a smooth paste. Spread this mixture over each slice, ensuring a thin layer while leaving a narrow edge bare. Tightly roll each slice and press gently to seal.
  • In a shallow dish, whisk together the eggs, milk, cinnamon, and vanilla extract until fully blended. Place a skillet over medium heat and add a portion of the butter. Dip each prepared roll into the egg mixture briefly, then arrange seam-side down in the hot skillet.
  • Cook the roll-ups for 2 to 3 minutes in total, turning periodically to achieve even browning on all sides.

Notes

Use soft, fresh bread to facilitate rolling. Avoid excessive soaking in the egg wash to maintain structure. Maintain a medium heat to prevent scorching. These roll-ups can be prepared ahead of time, stored, and reheated. They also freeze well for up to a month.
