Chocolate Covered Cherry Rice Krispies Treats

Ingredients
  

  • 1 tbsp shortening
  • 6 cups Rice Krispies cereal gluten-free alternatives such as malt o' meal may be substituted
  • 4 oz cherry-flavored gelatin powder
  • cups semi-sweet chocolate chips
  • 10 oz mini marshmallows
  • 4 tbsp butter regular or a dairy-free substitute like Earth Balance

Instructions
 

  • In a saucepan over medium heat, melt the butter thoroughly. Incorporate the mini marshmallows and stir continuously until they are fully liquefied. Sprinkle in the cherry gelatin powder, stirring until evenly combined. Withdraw the pan from the heat and immediately fold in the Rice Krispies cereal, mixing to coat every piece.
  • Prepare a rimmed baking sheet by greasing it lightly. With clean, well-oiled hands, press the mixture gently into the sheet, ensuring an even layer without compacting it too firmly.
  • While the base sets, place the chocolate chips and shortening in a microwave-safe bowl. Heat for one minute, then stir until smooth. If lumps remain, continue to heat in 15-second increments, stirring between each interval, until fully melted and velvety. Drizzle the melted chocolate evenly over the cooled cereal mixture.
